This is a fun, fresh new take on the classic bacon, lettuce and tomato sandwich! It’s just as tasty, but instead of bread, it’s made with a yummy savory waffle.

Ingredients:

Waffle Ingredients:

1/2 c. All Purpose Flour

1 tsp. Baking Powder

1 tsp. Cornstarch

1/8 tsp. Salt

1/8 tsp. Black Pepper

1 Egg

2 Tbs. Sugar

1/4 c. Milk

1/2 c. Water

2 Tbs. Unsalted Butter, Melted

2 Tbs. Chopped Chives

2 oz. Cheddar Cheese

Topping Ingredients:

2 Tbs. Mayonnaise

1 Tomato

2 Lettuce Leaves

6 Slices of Bacon

Optional Toppings:

Avocado

Onion

Directions:

  1. Whisk flour, baking powder, cornstarch, salt and pepper in a large bowl.
  2. Add the egg, sugar, milk and water.
  3. Use the Microplane Adjustable Coarse Grater to grate the cheese and chop the chives with the 8” Chef’s Knife.
  4. Spray each side of the Waffle Puff Pan with oil. Heat the pan at medium heat for 3 min.
  5. Add 1/4 cup of batter to the pan, filling in all the bubbles. Flip the pan over and cook for 2-3 minutes. Flip the pan again and cook for 2 minutes, or until the bubble waffle is golden brown.
  6. Remove the waffle with the fork and let is rest for 1 minute.
  7. To assemble the sandwich: Spread the mayonnaise onto each side of the waffle. Later bacon, lettuce and tomato and top with the second bubble waffle.
  8. Cut into quarters before serving. Enjoy!
