This is a fun, fresh new take on the classic bacon, lettuce and tomato sandwich! It’s just as tasty, but instead of bread, it’s made with a yummy savory waffle.
Ingredients:
Waffle Ingredients:
1/2 c. All Purpose Flour
1 tsp. Baking Powder
1 tsp. Cornstarch
1/8 tsp. Salt
1/8 tsp. Black Pepper
1 Egg
2 Tbs. Sugar
1/4 c. Milk
1/2 c. Water
2 Tbs. Unsalted Butter, Melted
2 Tbs. Chopped Chives
2 oz. Cheddar Cheese
Topping Ingredients:
2 Tbs. Mayonnaise
1 Tomato
2 Lettuce Leaves
6 Slices of Bacon
Optional Toppings:
Avocado
Onion
Directions:
- Whisk flour, baking powder, cornstarch, salt and pepper in a large bowl.
- Add the egg, sugar, milk and water.
- Use the Microplane Adjustable Coarse Grater to grate the cheese and chop the chives with the 8” Chef’s Knife.
- Spray each side of the Waffle Puff Pan with oil. Heat the pan at medium heat for 3 min.
- Add 1/4 cup of batter to the pan, filling in all the bubbles. Flip the pan over and cook for 2-3 minutes. Flip the pan again and cook for 2 minutes, or until the bubble waffle is golden brown.
- Remove the waffle with the fork and let is rest for 1 minute.
- To assemble the sandwich: Spread the mayonnaise onto each side of the waffle. Later bacon, lettuce and tomato and top with the second bubble waffle.
- Cut into quarters before serving. Enjoy!
