You may have noticed that the last few recipes have been quite simple and fallen into the snack/appetizer/candy  category.
There is a good reason for that, although I LOVE a good appetizer I have not been spending as time in the kitchen as I would like, so I’ve been opting for easy & quick recipes.

By the time this is published I should be one week out of knee replacement and on the road to recovery, FINALLY.  Then back to some real cooking.
Here is another one of those recipes that is super easy and always a hit at whatever gathering you have to take something to.  Props go to my friend and neighbor Julie for sharing this with me.  I have made these waaaay to many times for my own good & health.  But hey, you only live once.
I mentioned a few recipes back I don’t use my microwave for “cooking”.  This is another example of it.  I use my double boiler.  If by chance you don’t have one and easy fix is a small saucepan with a metal or glass bowl partially submerged in the saucepan filled about half way with water.  You can cover with foil if needed, but this needs to be stirred so no need.  For those of you who are comfortable using the microwave to melt almond bark, KUDOS. I have a tendency to overcook & scald it.  Lesson learned.
This is a total of 2 ingredients, and it tastes just like a Mr Goodbar. YUM.

PEANUT CLUSTERS
Chocolate almond bark
Dry roasted peanuts
Use 6 blocks or ½ the pkg of almond bark
And 1- 10 oz. jar of dry roasted peanuts (I have used unsalted, lightly and salted) I prefer the salted
Melt the chocolate, remove from heat, add the jar of peanuts & stir till all is coated.  Drop by the teaspoonful onto wax or parchment paper.  Let set up & serve.
If making when its warmer you might want to refrigerate prior to serving, they will melt quite quickly.  This takes maybe 30 minutes on top of being easy it’s quick.
