Again it is an overcast rainy day, wishing I could be home in the kitchen all day. My favorite time of the year and love, love, love these cooler days. This is a recipe that is very reminiscent of Mexican Corn the street vendors sell. The corn is being harvested now and this is super easy to make. I recommend using fresh opposed to a can of corn, but frozen will work, just make sure its thawed and drained. Don’t forget to check the famers market. This is basically chop and throw in the bowl. I did use this as a salad rather than a dip. It is great for a side or if you are vegetarian, very filling.

The recipe calls for 1 jalapeno, I judge how much I’ll use on the heat of the pepper and the size of it, so many variables there. Make sure you seed it and get all that membrane out. (your heat is in the membrane) chop it fine. The recipe also calls for mayo…FYI there are only 2 recipes I have that call for Miracle Whip, it is not a staple in our house. I know there are some diehards out there that only use Miracle Whip, I can accept that. In my life it’s mayo all the way. While I’m at it I might as well confess that I only use salted butter even though a lot of the recipes (this one) calls for unsalted. If there is salt in a recipe and you are supposed to use unsalted and you use salted butter, just cut the amount of salt you add. In most cases there is not a noticeable taste difference.

The additions to this recipe are not all noted. of course I used more garlic and the corn was basically 5 ears I had that were good size. (Thank you Bountiful Baskets for all my frozen corn…hint on that if you buy a bushel or a few, cut the tip and end off, leave the husk on and put them in a Ziploc and freeze until needed). Since I mentioned Bountiful Baskets, they are doing a slow roll out on the routes with new distributor so hopefully in the next month we will be operational again. I have never used the cotija cheese prior to this recipe, I found it at Super Save. You could substitute feta for the cotija it if you wanted. It’s definitely an odorous cheese. A little goes a long way. Just a few words about the lime, if at all possible use fresh, the stuff in a bottle is never as good, be it lemon or lime. Sure it’s easier but there is a definite difference in the flavor.
