This has been a crazy week. I feel like all I have done is put out fires. Well that is not a good analogy considering all the fires in the Panhandle. Okay I am chasing my tail and not gaining ground. With that said this week is all about timesaving.
A few weeks ago, my sister asked for a beef stroganoff recipe. She was down for the famous paint party (by the way she is the one holding the instructors painting, top row far right). For whatever reason, she is not an adventurous cook or eater, for that matter neither… is her twin my brother. So, per her request I am trying out easy recipes for stroganoff. This one was made while she was here and it passes the test.
Bear in mind this is not the version that has a rich thick gravy, or calorie laden. Given the fact I have 2 new knees (honestly, 1 new one is 8yrs old) and would like to avoid any further surgeries, plus I would like to lose a few pounds (minus the exercise part) you laugh, I’m serious. Isn’t it always something, I suppose it’s better than the alternative, I’m still here to complain about it.
So, I have begun experimenting with recipes even more to make the battle easier. I will admit not everything can be substituted and some tradeoffs are horrible. I hate rules, diets, regimes anything that tells me this is the way to do something. I think I know better. All this age & wisdom must be good for something. I buck the system, ask questions and generally a pain in the .….Well if you know me this isn’t something that just happened, basically I have always been this way, only gotten worse. At least I own it and wear that badge proudly.Fast & Easy Stroganoff otherwise known as “Paint Party Stroganoff”
1 tbl olive oil
1 ½# sirloin sliced thinly against the grain
8oz mushroom (I did not add)
4 cloves garlic
1 cup sliced onion
2 tbl butter
1 ½ C beef stock (I used bullion)
½ salt (I used meat tenderizer instead)
½ tsp pepper
2 tbl Worcestershire
¼ c flour ( I used 1-2 tbl cornstarch)
½ c sour cream (I used light)
1 pkg No Yolks noodles

Heat olive oil, add meat salt and pepper cook for about a minute on both sides, remove from pan and set aside.
In skillet add onions, garlic chopped, and mushrooms, cook for about a minute, add butter and cook til onions are translucent.
Sprinkle flour over vegetables still and cook til no flour is visible and all veggies coated.
Add beef stock and Worcestershire til all is combined. Simmer on low til thick 1-15 minutes.
In another pot bring you water that is well salted (like the sea) add your noodles and cook as directed on the package drain and set aside.
When sauce is thick, add the meat back in add the sour cream and stir til creamy.
Serve meat over noodles
