Ingredients:
- 1 1/2 lb. of Beef Caldillo or Ground Beef
- 5-6 Med. Russet Potatoes, peeled & diced
- 3/4 c. Roasted, peeled, & diced HATCH green chile
- 1 garlic clove, chopped finely
- 1 can of petite diced tomatoes (undefined)
- 1 tsp. Beef Bouillon
Directions:
- In a large soup pot, brown meat with garlic and potatoes.
- Add green chiles, tomatoes, and beef bouillon.
- Add 2-4 cups of water and stir well.
- Cover and simmer for 1 1/2 – 2 hours or until meat and potatoes are tender.
- Serve with warm flour tortillas or tortilla strips.
If desired, add sour cream, shredded cheddar cheese, Pico de Gallo, or chopped cilantro on top of each serving for a little pizazz!
