This recipe is a lunchtime favorite “pasta-fied.” With summer upon us, the heat is draining, and a light, delicious meal is always on the mind. This Cobb Pasta Salad is perfect for your lunch or the dinner table this summer! It serves up to 8 and takes 25 min. or less to prepare.

INGREDIENTS:

– Kosher salt
– 1 lb. gemelli pasta (swirl)
– 4 slices bacon
– Ranch dressing
– 3 hard boiled eggs, roughly chopped
– 1 c. cherry tomatoes, halved
– 1 avocado, chopped
– 1/4 c. crumbled blue cheese
– Freshly ground black pepper

DIRECTIONS:

  1. In a large pot of salted boiling water, cook the gemelli according to package directions. Drain and transfer to a large serving bowl.
  2. Cook bacon until crispy. Drain and chop, then set aside.
  3. To serving bowl, add ranch dressing and toss with pasta until evenly coated. Add bacon, egg, tomatoes, avocado, and blue cheese. Season with salt and pepper and toss to incorporate.
  4. Drizzle with more ranch dressing and serve.
