This breakfast recipe is one you’ll be glad to sink your teeth into! It’s from Carol Ann’s kitchen.

Ingredients:

  • 3 pork chops (boneless are easiest)
  • 1 onion
  • 4 jalapeño peppers
  • 2 potatoes
  • 1 Tbsp. Cooking Oil
  • Salt, to taste
  • Pepper, to taste

Directions:

  1. Cube up pork chops into bite-sized pieces
  2. Slice onion and jalapeños.
  3. Cut potatoes into slices (French fry style)
  4. Salt and pepper the pork chops to taste, then brown in a skillet with a tablespoon of oil.
  5. Once the pork chops are browned, add onions, jalapeños and potatoes to into the skillet to cook.
  6. Let it simmer, stirring around occasionally to avoid burning, until everything is caramelized.
  7. Serve with eggs and a tortilla! Enjoy!
