Recipe – Baked Chile Rellenos
Peel and destem 8 – 10 Ledbetter chile and remove seed. Stuff with Ranchero cheese or your favorite. Spray baking dish with Pam and lay chilies in flat. Mix 3 eggs, 1/4 cup flour, 3/4 cup milk and 1/2 tsp each salt and pepper. Pour over chilies.
Top with shredded cheddar jack or again your favorite. Bake 45 minutes at 375 degrees.
Cooked sausage is a great addition to egg mixture.
Enjoy – ( great reheated also).
